Baracoa Christopher's Avocado Onion Salad with Mango

Fresh, light and easily prepared, this take on a traditional Cuban salad is the perfect appetizer or side for any entree.  The addition of mint provides a fantastic flavor counter to the lime juice based dressing.  The use of freshly grated Swiss cheese as the final Flavor Tier aligns with the cheese used in Ybor City Cuban Sandwich Cups so serve together for a great appetizer duo or light lunch.

Dressing
1 t honey
1 lime, juice and zest
1/8 t paprika
1 T olive oil
1/4 t salt
dash black pepper

1 avocado, peeled and cubed
1 small purple onion, diced
1 mango, peeled and cubed
1 T fresh chives, chopped
1 T fresh mint, chopped

2 T Swiss cheese, grated

Flavor Tier 1

In a small bowl, whisk together all of the dressing ingredients.

Flavor Tier 2

Place the avocado, onion, mango, chives and mint into a medium sized bowl. Add the dressing and mix gently.

Flavor Tier 3

Divide the salad between 4 salad plates. Top each plate with 1/2 tablespoon of the Swiss cheese.
