Here is a quick and fresh salad dressing. Especially good on fruit and lettuce salads, it also works well drizzled over avocados. It can be served as is or reduced to increase the flavor levels.
½ c fresh lime juice (about 4 limes)
zest of 3 limes, divided
2 T extra virgin oil
¼ c orange blossom honey
½ t cardamom
1/8 t cayenne pepper
Place all ingredients in small bowl. Whisk until blended. Store in refrigerator for up to one week.
Pour dressing into small saucepan. Heat over medium high heat until reduced in half, stirring occasionally.
