I first enjoyed this cocktail in an off the beaten path bar near Jose Marti Park in Little Havana. Considered the grandfather of the mojito and daiquiri, the Canchánchara is a simple drink consisting of simple ingredients – rum, lime and honey water. The cocktail sips well on a warm weather day as a before or after dinner beverage. The honey water is a honey simple syrup made by mixing honey and warm water.
2 oz white rum, such as Rhum Clement Canne Bleue White Rum
1 ½ oz honey water
2 T fresh lime juice
small lime wedge
In a small bowl, mix 2 tablespoon honey and 2 tablespoon warm water. Stir to dissolve completely. (May be made in larger quantity and stored in the refigerator for up to a week.
In a rock glass mix rum, 1 ½ oz of the honey water and the lime juice. Add 3 ice cubes and stir 30 seconds. Place a lime wedge on the glass rim.
