Created to replicate the flavors of an El Dorado cocktail, this appetizer involves only four ingredients – shrimp, lemon juice, honey and, of course, tequila! Resist the urge to add garlic, spices, herbs or any other flavors. This appetizer will surprise when such few ingredients result in such complexity.
The quality of the tequila will influence the final flavor so go with one of quality such as Fortaleza. And then use the remainder to make El Dorado My Way.
1 pound raw Jumbo shrimp, shells removed, tails attached
2 lemons, juiced and zest
2 T honey
¼ c tequila such as Fortaleza
Spray a cast iron or other heavy skillet with cooking oil. Heat over medium high heat. Add the shrimp. Add the lemon juice. Cook shrimp 2 minutes, turning at the half way mark.
Remove the pan from the heat and add the honey and tequila. Return to medium high heat. Cook for an additional 4-5 minutes until the tequila has cooked off and the shrimp is glazed.
Evenly divide the shrimp between 4 small plates. Sprinkle with lemon zest.
