Makes ½ - ¾ cup sauce

Rum Lime Finishing Sauce

Try this over fish, seafood and poultry as well as fruit. The freshness of the lime juice seems to increase with the depth of the rum. Honey adds a sweetness to counter the bit of heat flavor.

1/2 c freshly squeezed lime juice
1/4 c spiced rum such as Kraken Black Spiced Rum
2 T olive oil (Roasted Garlic Oil if you have on hand)
2 t finely grated lime zest
1 t fresh thyme
2 T honey
½ – 1 t fresh marjoram, chopped (has the same qualities as oregano but sweeter and bolder. Begin with lesser amount and adjust to taste)
1 t salt
½ t chili powder
Candied ginger, chopped

Flavor Tier 1

Heat all ingredients in a small pan, whisking to blend well. Simmer over medium heat until reduced by half. Remove from heat and keep warm until ready to use. Can be kept in refrigerator for one week and reheated in microwave prior to using.

FLavor Tier 2

Use chopped candied ginger to top any dish you create with this sauce. The sweet ginger is an unexpected flavor complement to the sauce.
