In less than 30 minutes, these outstanding potatoes are ready to plate. Sweet with a tang of citrus, they provide the perfect side dish to roast pork, any poultry and Henry James’ Rum Runner Chicken.
Grated zest of 2 limes
1/4 cup fresh lime juice
1/4 cup safflower oil
2 T honey
1/2 t kosher salt
1/4 t freshly ground black pepper
4 medium sweet potatoes, peeled, cut into 1/2″ slices
1 T chives, chopped
Place the glaze ingredients in a small jar. Shake vigorously to blend
Pour half of the glaze into a small bowl. Add sweet potato slices and toss to coat. Continue until all slices have been coated.
Heat a grill pan over medium high heat. Place potato slices in pan. Cook for 15-20 minutes, turning once. Potatoes are done when a fork with easily pierce.
Evenly divide potatoes between 4 serving plates. Drizzle with remaining glaze. Sprinkle with chives.
